Leg of Lamb

 

Preheat oven to 375

 

Place lamb in roasting pan

 

Cook for 20 minutes per pound

 

Seasoning: (Optional)

3 cloves crushed garlic

3 tablespoons rosemary

1/2 cup virgin olive oil

salt/pepper to taste

4 tablespoons balsamic vinegar

 

Standing Rib Roast

 

Preheat oven to 500

Rub Roast with olive oil, salt & pepper. Enhance flavor by adding garlic and rosemary

Place roast on a rack in a roasting pan. Bake for 15 minutes at 500

 

*IMPORTANT: Turn temperature down to 325: open oven door for 2 minutes in order to regulate your oven temperature.

 

Cook at 325 for 12 minutes per pound

 

Use thermometer to check internal temperature. For medium rare temp should read 130.

 

Remove roast and let stand for 15 minutes.

Preheat oven to 500

Place in Roasting Pan

 

Cook for 7 minutes per pound

 

Apply SMP Glaze 15 minutes before taking the ham out of the oven.

How to Boil: Fill pot with enough water to cover the brisket completely. Bring water to a boil. Reduce heat and simmer in covered pot for about one hour per pound. Test tenderness until it is “fork tender”. Simmer longer if desired.

Slow Cooker Method:  Cook brisket with desired ingredients in a covered cooker, filled with enough water to cover the brisket if possible. Cook on low for 8-10 hours.

Oven Roasted: Preheat oven to 325, Place meat on rack in roasting pan, fat side up, with desired ingredients. Add water to the bottom of rack (enough to bring the water level up to about halfway). Cover pan tightly with foil and roast until fork tender, usually about one hour per pound.

 
Crown Roast of Pork

Preheat oven to 350 degrees
Season roast with olive oil, salt, pepper, sage, thyme or any spice combination you like.
Cook at 350 degrees for 20 min per lb - internal temp should be 155.
Remove from oven and allow to rest for 20 minutes before cutting.
